that is how my moms does it birdlady and it is truly good.
i take them and half them so (taking out seeds) and put them in a baking pan with about an inch of orange juice in the bottom. preheat oven to 400.
then i rough cut sweet potato, carrot, ash potato, onion, turnip, lemon and clementine halves and add a big handful of fresh cranberries and toss them in the baking pan as well. i then liberally sprinkle brown sugar, vanilla, cinnamon, nutmeg and a tiny bit of clove all about the pan and mix it all up. then i turn the squash halves upright and begin to bake it all, covered lightly with foil. midway thru i take foil off, give it all a light stir and add a bit of butter and finish off (till nice and bubbly and roasted looking). i take the clementines and lemons out as they have skin on and then put a half squash per plate and fill them with other veggies. this is excellent with wild rice stuffing and asparagus, along with crusty buttery bread.
and as a sidenote-birdlady-i made your apple pies at work and instead of a crust on top i did a sweet crumb topping and man they ATE ALL TWELVE OF THEM UP UP UP....they loved them...give thanks for sharing the recipe sis.
