Easter Bun and Cheese

It's that time of year again for the traditional Jamaican Easter fare: Bun and Cheese. For those uninitiated, Easter Bun is a sweet spice bun, similar to hot cross buns, which in Jamaica is almost always served with a slice of cheese, not just any cheese, mind you, but Tastee Cheese.

I've tasted some pretty awful bun but a delicious Easter bun is indeed a treat.

Here are a couple of different recipes, the first uses Guiness

Montego bay Easter bun recipe

This recipe is made with a touch of Guinness stout.
Ingredients
2 cup brown sugar
4 tsps baking powder
1 tbsp butter
1 tsp cinnamon
1 cup Guinness stout
½ cup milk
1 tsp nutmeg
1 tsp lime juice
1 egg
¼ tsp salt
3cups flour
1 cup raisins
preparation
1. Preheat the oven to 350 Degrees for about 12 minutes.
1. Beat egg and add sugar. Melt the butter then add the milk.
2. Mix in with the stout and the dry ingredients and beat until smooth then add the raisins.
3. Pour into a greased loaf tin and bake for 1 hour.
4. Remove and allow to cool then remove.

Easter Bun

INGREDIENTS
3 cups of sifted flour
¾ cup cows milk
1 tbsp low fat butter
3 tsp baking powder
1 tsp grated nutmeg
1 tsp cinnamon spice
2 cups white sugar
1 beaten egg
1 cup fresh raisins
½ tsp lime juice
1 Pinch of salt

PREPARATION
Grease a baking tin and line it with grease paper.
Preheat your oven to at least 320 degrees F. about 15 minutes.
Mix egg, sugar, butter and milk and turn into a liquid batter
Add all dry ingredients and beat in a cake mixer until smooth.
Add the fresh raisins to the mix and then pour into the lined and greased tin.
Bake the mix for approximately 1 hour.

Easter Bun Glaze
½ cup brown sugar
½ cup water
Boil water and sugar until thick
Spread the glaze on the Easter bun and return to oven for an additional 8 minutes
